Got Protein

Damon will tell you I have been on a SERIOUS egg kick lately. With all the working out (HEY 3 times/ week is better then zero, right?), going on around here I need protein. I'm not a big chicken or beef person so scrambled eggs have become a must have. Plus, they take like one minute to fix!!!! I found this recipe for scrambled egg toast with goat cheese at Smitten Kitchen and it makes my mouth water just thinking about it!!!

2 large eggs
2 tablespoons milk, half-and-half or cream
1/8 teaspoon salt
Few grinds black pepper
2 teaspoons butter or olive oil
A 1-inch thick piece of bread
1 tablespoon goat cheese
1 teaspoon chives or scallion greens, thinly sliced
