Have a Cheesy Christmas

I battled the Christmas Eve crowds in two different stores. I wasn't there to buy the latest Wii game or to wrestle away holiday barbie from some poor stressed out parent. I was there for CHEESE. EIGHT types of cheese to be exact.

Gorgonzola, Crumbled Bleu, Fresh Mozzarella, Australian White Cheddar, Fresh Grated Parmesan, Shredded Sharp Cheddar, Gruyere & Fontina.

Some will be used in this yummy Mac & Cheese, and some in this Cheesy Corn Bake. What Christmas recipes are you using this year?? Brandi's Cheesy Potatoes

-1 Bag of frozen shredded potatoes
-1 can of cream of mushroom soup
-1 can of cream of chicken soup
-1 can of cream of broccoli soup
-8 oz of Sour Cream
-2 bags of shredded casserole cheese or your favorite blend (4 cups total)

Preheat oven to 375 and spray a 13x9 pan with non stick spray.

Mix up potatoes, soups, sour cream and one bag of the cheese in a large bowl. You can add seasoning to your own taste.

Add potatoes to pan and top with the other bag of cheese.

Bake for 30-40 min or until top is golden brown

You can substitute low salt and low fat soups/sour cream for a healthier batch, people don't seem to notice when I do it. :)

Its super easy to make and SO yummy!! I skipped the part where you make your own sauce and went with store bought and served it up with whole wheat spaghetti!

Chicken Curry

Ingredients
4 Chicken Breasts
1 Onion
5 Potatoes
2 C cooked brown basmati or jasmine rice
1 can low fat Coconut Milk
1 Package Golden Curry (you can find it in the international foods section at Kroger)

Make 2-3C of brown rice according to package directions
Chop chicken into 1 inch cubes, mince onion
Saute chicken and onion together until chicken is no longer pink
While chicken is cooking chop up potatoes into 1 inch cubes
Once chicken is done cooking add enough water to cover chicken, add coconut milk
Put the potatoes into the chicken mixture, there should be just enough liquid to cover the chicken and potatoes. Turn stove to high and boil until potatoes are tender.
Once potatoes are tender add the curry blocks and stir for approximately 5 minutes. The mixture should thicken and be evenly distributed.
You can serve the curry over the rice or I like to dump it all together and have a chicken curry goulash of sorts.
